Zucchini-Carrot Cake Overnight Oats

1 cup oats
½ cup shredded carrots
½ cup shredded zucchini
2 cups almond milk (or other milk of choice)
2 tbsp almond butter  (or nut butter of choice)
2 tbsp chia seeds
1 tbsp cinnamon
½ tbsp turmeric
½ tsp pepper (optional)
½ tsp salt (optional)
2 tbsp maple syrup, agave, or other sweetener of choice

Mix ingredients well and transfer to four containers. Top with crushed nuts (we recommend roasted walnuts) and coconut flakes. In the morning, add banana slices and more milk and sweetener as desired. Makes four servings.
