Veggie Frittata


Ingredients:
  • 1 tbsp avocado or coconut oil 
  • 1 small red onion
  • 1 bell pepper
  • 1 large tomato
  • 3 medium portobello mushrooms
  • 10 eggs
  • 4 oz container crumbled goat cheese 
  • 1/2 tbsp sea salt 
  • 1/2 tbsp ground black pepper 
  • 1/2 tbsp ground turmeric 
  • 1/2 tbsp ground paprika 
  • 1/2 tbsp dried rosemary 
Chop the onions into thin slices and dice the remaining vegetables into small pieces. Preheat the oven to 400F. Heat the oil in a pan and add the onion and vegetables, stirring occasionally so they don't burn or stick in the pan. Cook the vegetables on medium-high for 5 minutes. Meanwhile, mix the eggs, cheese, salt, and spices in a bowl. Transfer the vegetables to an oven safe dish and pour in the egg mixture. Mix well so that all the vegetables are coated with the eggs. Bake the dish at 400F for 30 minutes. Broil for 3-5 minutes to brown the top. Makes 8 servings.
